摘要

食学体系是全面解决人类食事问题的知识体系，在食学体系的建构中，食物成分学是食者需求学的重要组成部分。研究重新确立了食物成分的概念和内涵，以研究食物内在的全部特征为宗旨，提出食物元性学和食物元素学的双元认知体系，开展对食物元性、食物元素的全面研究，指导人类科学膳食，从而满足人类生存、健康、长寿的需求；基于东方养生学理论、现代营养学理论的支撑，厘清人类面临的食学问题，并对学科未来的发展进行了展望。

Abstract

The shiology system is a comprehensive knowlege framework for addressing human food-related issues. In the construction of the shiology system， the study of food components is a vital part of the study of eaters’ needs. This study has re-established the concept and connotation of the food components with the aim of studying all the inherent characteristics of food. It proposes a dual metacognitive system with food originology and food elementology as its core content to conduct in-depth research on food components and food characteristics to guide human scientific dietary practices， thereby meeting the human needs for survival， health and longevity. Based on the eastern health theories and modern nutritional theories， it clarifies the shiology issues faced by humanity and provides a vision for the future development of the discipline.
